Growing up, it was a Sunday tradition for my family to enjoy breakfast together—pancakes, eggs, and breakfast tacos of some kind. One of our favorite breakfast tacos was (and still is) barbacoa—which is why my parents would often get up extra early to buy a family-sized amount of meat, along with a warm stack of tortillas, and a whole lot of salsas and limes. Today, I still make this recipe because it reminds me of my hometown, childhood memories, and it makes me feel connected to my Mexican heritage.
