Dini Klein is a “Tastemaker” on Tastemade, the insanely popular video network, as well as a food blogger who regularly shares healthy and delicious recipes. She also recently started a family-friendly meal prep subscription service called Prep And Rally, to help get kids to eat healthy, “grown-up” food–that’s a mission we think mothers everywhere can get behind. When Dini isn’t making her next hit recipe, she’s hanging out with her lovely family, which consists of her husband Mike and two young children, Andi and Jolie. Below, this food expert tells us everything she eats in a typical day.

Breakfast

What I eat: Pancakes with Andi and Jolie! We make fresh pancakes every single morning. Jolie demands it and will actually make them herself if I say no. Today we ran out of eggs and she was describing to me how to make a flax egg in place of an egg. I laughed really hard. They’re a big part of the process every morning and it’s kind of like our daily ritual! I also make coffee every morning in my Breville Barista Express. Andi and Jo help me make that too and love pushing all the buttons! I froth oat milk and make a killer double shot latte. It’s my morning treat that I look forward to every single day!
The time I eat it: 6:30 A.M. 
How I make it or where I get it: We make up a new recipe every day mainly because I hate dirtying up measuring cups and spoons. I get lazy and don’t enjoy following exact recipes. It kind of makes it like a little adventure every morning. We always have a similar yet slightly different result! Though we always use nut milks, maple syrup to sweeten, either whole-wheat flour or gluten free blend to lighten them up, and peanut butter powder. I know they’re starting the day off in the best way possible!!

Snack

What I eat: Persimmon
The time I eat it: 8 A.M.
How I make it or where I get it: Whole Foods. We’re addicted to them in our house this time of year!

Lunch

What I eat: 2 oozie eggs with leftover Prep and Rally meal prep pesto and a green pepper, and cucumber side salad. Whatever is fast and healthy!
The time I eat it: 11 A.M.
How I make it or where I get it: In a frying pan. Super quick and easy! And the pesto was pre-made on Sunday from meal prep. Sauces and dressings made on Sunday are essential for great eating habits all week long!

Snack

What I eat: Whole Foods pea crisp chips. High in protein, low sodium but still gives you that crunchy chip feel. Addicted!
The time I eat it: 2 P.M.
How I make it or where I get it: Whole Foods.

Dinner

What I eat: Coconut-Pineapple chicken over rice (cauliflower rice for me and brown for the kids and hubs) with peanut satay sauce. We had broccoli as a side dish. This dinner was the Monday night Prep + Rally dinner. SO good and even the kids licked their plated clean. They’ve become phenomenal eaters because of Prep + Rally and are always having a variety of food in front of them. We never did chicken nuggets or freezer pizza. One dinner for the whole family!
The time I eat it: 5:30 P.M. (I eat early with the kids and then usually a little extra when my Mike gets home. The kids also have a second dinner then too. HA!).

Snack

What I ate: Glass of wine and popcorn.
The time I ate it: 9 P.M.
How I made it or where I got it: Mike and I love to unwind with some wine and popcorn on the couch at night. I’m usually still on my phone or computer working while he’s watching Game of Thrones. #Marriedlifewithkids lol. 

Workout

Workout I did: Spin class at Cycle Bar. 

The time I did it: 9:30 A.M. with my favorite instructor in Los Angeles. He plays all my favorite music and has such insane rhythm. It’s like a dance party on a bike. Obsessed!

Overall thoughts about your day today and how you feel

Energetic (coffee helps and I sometimes go for that second latte!), and motivated! I work hard but absolutely love what I do and juggling my hectic life as a working mama!

What are other wellness activities or habits that make you feel like your best self?

I love Plate Fit. The vibrating machine makes your body work double-time and a 30 min class really feels like an hour of work. It’s the best bang for you buck and time! I like to use essential oils in the house at night and light candles. Wine is my go-to at night!
