Though you’ve likely seen her on The Bachelor and Bachelor in Paradise, Tenley Molzahn Leopold is no longer an eligible single–she’s recently married and shared her dreamy Italian honeymoon with her nearly 300,000 followers. Because we love getting healthy recipes from wellness-focused women, we asked the former bachelorette to share some of the mindful eating tips she’s picked up as the co-founder of lifestyle program The DIY Cleanse, a company dedicated to making clean eating simple and fun. Below, the holistic nutrition health coach shares all of the superfoods she fits into her breakfast, lunch, and dinner during a typical day.

Breakfast

What I eat: A breakfast bowl! (one of my staples). Big handfuls of arugula, then I drizzled a little olive oil & sprinkle Himalayan pink salt. Then I add roasted sweet potatoes (roasted in the oven after being massaged with avocado oil, pink salt, pepper, and rosemary). 2 Pieces of High Quality Bacon (yes, I eat bacon!) and topped with a few Avocado slices with a last little bit of Himalayan pink salt & pepper. Sometimes I drizzle a little organic Siracha for some heat.
The time I eat it: 7 A.M.
How I make it: My husband and I are loving starting our days together now that we’re living together! We share the role of making breakfast. I always roast sweet potatoes or other veggies ahead of time, so we already have those on hand. Taylor is on bacon duty and then reheats the sweet potatoes in the bacon grease (extra flavor and healthy fats). I’m in charge of getting the bowls ready with arugula and avocado. 

Snack

What I eat: A Lofty Coffee- long black with homemade vanilla and a splash of homemade almond milk with 1tbsp of coconut oil and collagen!
The time I eat it: 9 A.M.
Where I get it: I got it from my favorite local coffee shop, Lofty Coffee in Encinitas.

Lunch

What I eat: Gluten-free avocado toast on Against The Grain Gourmet Vermont Country Rolls. I toast these (we don’t have gluten in our home, BUT I do have a specific side of the toaster for gluten-free bread only just in case!) For my avocado to top my toast, I mash up about 1/2 an avocado, a squeeze of lemon juice, some Himalayan pink salt, pepper, nutritional yeast and mash it all together and top my toast. I add a few HUGE handfuls of leafy greens (usually arugula) and then I add some organic deli turkey on top of that.
The time I eat it: 1:30 P.M.

Snack

What I eat: Siete Chips (grain-free cassava chips) dipped in majestic garlic jalapeño dip.
The time I eat it: 2:30 P.M.— I don’t wait long after lunch. 😉
Where I get it: Both from my health food store, Jimbos!

Dinner

What I eat: Yellow Curry with Chicken!
The time I eat it: 6:45 P.M.
How I make it: I make this in the crockpot. I created the recipe because Taylor and I LOVE yellow curry. 

What are other wellness activities or habits that make you feel like your best self?

Running – Every Thursday my best friend and I have a running date!
Barre classes.
Going to bed by 10 or before… this is a new one for me, but feeling GREAT.
I drink LOTS of water daily.
Devotionals/Prayer Journal Time.
Taking breaks for fresh air on busy days.
Eating Good and balanced meals with carbs, fats, protein, and all the micronutrients I can get!
Making time for Soul food: Time with Taylor, time with friends, time in the kitchen, time outside, all the things that feed my soul.

After years and years of being sick (from the day I was born), I’ve been working towards complete healing in my gut, but it also took a whole new lifestyle. My lifestyle upgrades have changed my life, so that’s why I’m so passionate about the programs I’ve created and being able to work and share with others, my clients and followers on social media!!! I’m also super excited for this next season of life and all it has to bring!
