We already take you inside of the morning and nightly routines of interesting women, and now we’re taking things a step further with our new Food Diary segment. We’ll be bringing you specific and detailed logs of what our featured guests eat on a daily basis, to hopefully inspire you to step out of your food comfort zone and try some of their suggestions.
Celeste Thomas is the mind behind The True Spoon, a blog where she shares her holistic skincare practices, with the hope of helping others feel as incredible as possible about their skin. After dealing with acne for several years, Celeste has adopted an approach to beauty that includes an #eattoglow diet full of healthy whole foods to help her skin thrive. Wondering what this LA-based food expert eats in a day to help her glow from the inside out? Find out below.

Breakfast

What I eat: #Eattoglow smoothie. I change up the superfoods in every smoothie but the base stays pretty much the same: chia seeds (omegas for healthy skin and fiber to keep me full), Almond butter (healthy fat to keep skin moisturized and fat to suppress hunger hormones), spinach or romaine (antioxidants for youthful skin and pollution protection), collagen (for amino acids to promote elastin in the skin). Today I added cacao nibs and coconut stevia for a yummy chococo flavor and topped it with my homemade probiotic coconut yogurt, a better alternative to supporting your gut health without spending $25 on Coconut Cult.
The time I eat it: 9:30 A.M. I do 13 hours of fasting every day–I eat breakfast 13 hours after dinner the night before.

Snack

What I eat: I don’t snack in the afternoon, because my loaded smoothie keeps me full until 1:30 or 2. I do like to have a mid-day matcha or low-caffeine coffee. Both coffee and matcha are antioxidant-rich (aka good for your skin)! You do however want to avoid regular coffee because caffeine can dehydrate your skin and cause inflammation. The caffeine in matcha is unique because it is paired with an amino acid that causes a low release of it, preventing negative skin effects.
Where I get it: I make my matcha or low-caffeine coffee at home. As for brands, I love Ippodo ceremonial grade matcha and four simgatic mushroom coffee with Lion’s mane and chaga.

Lunch

What I eat: A giant organic salad with wild caught salmon, fermented golden beets, red onion, avocado, and homemade mustard vinaigrette
The time I eat it: 2:00 P.M.
Where I get it: Homemade baby! Since I work from home I have the luxury of making lunch. I love to know exactly where my food comes from so there is no chance of accidentally getting any skin-sabotaging oils in my food! I use Imperfect Produce to get my organic produce, delivered to my door.

Snack

What I eat: Two spoonfuls of coconut butter! Healthy fats are life! They fill me up and have antimicrobial properties to help reduce breakouts.
The time I eat it: 5 P.M.
Where I get it: I buy the coconut butter from Let’s Do Organic on Amazon.

Dinner

What I eat: Organic turkey tacos! One of my husband’s favorites 🙂 I buy organic hard shells for him and I use romaine leaves for my tacos.
The time I eat it: 8:30 PM. My husband gets home a little later than I’d like to eat but I love him so much I’m willing to sacrifice. Lol.
How I make it: I made the tacos with organic turkey from Trader Joe’s and produce from Imperfect Produce.

Snack

What I eat: I love a piece of extremely dark chocolate and a spoonful of homemade probiotic coconut yogurt for dessert!
The time I eat it: 9 P.M. I try to eat my sweet treat right away because I have to start my 13-hour fasting clock!!
Where I get it: I love the 85% dark bar from green and black organics.

Workout

Workout I did: French Girl Fitness Plan (FGFP)! I developed the FGFP after my first trip to Paris, when I was floored by the long lean silhouettes of the majority of French women and I developed a low-intensity steady speed cardio plan to mimic a french girl’s normal fitness routine! This low-intensity plan keeps cortisol (stress hormone) levels low and torches fat! Because of this workout, I feel more comfortable in my skin than I ever have in my whole life!
The time I do it: 7 A.M.

Overall thoughts

I feel amazing when I do this routine! Eating healthy fat keeps me feeling full longer. Having a routine of making my own food at home keeps me feeling my best, so it’s a great time investment!

What are other wellness activities or habits that make you feel like your best self?

Some other wellness practices I love are calling my grandmothers–it’s so essential to connect with loved ones, especially since I don’t live near family. Nothing can brighten my day faster than a call to tutu (grandma in Hawaiian).

Anything else you’d like to add

Each day is an opportunity to truly love and nourish yourself. We can get so caught up in our perceived flaws that we don’t truly appreciate our many gifts. Try to approach each day with as much self-love and acceptance as possible!
