Below, this healthy living expert tells us everything she eats on the daily.

Breakfast

What I eat: Three eggs scrambled in butter with smoked salmon, fresh dill and toasted seeds.
The time I eat it: 7 A.M.
How I make it or where I get it: I use Clarence Court eggs which are delicious organic eggs from happy hens. I do all my food shopping at Waitrose usually, except for picking up the odd few bits from farmers markets and independent greengrocers when I can.

Snack

What I eat: Apple slices and almond butter.
The time I eat it: 10 A.M.
How I make it or where I get it: I’m obsessed with Pip and Nut coconut almond butter and love everything about the brand. It is hands down my favourite nut butter and I often don’t go a day without having it in or on something! My favourite apples are crunchy, cold pink ladies, which are IMO the best.

Lunch

What I eat: Oven roasted cod with roasted tomatoes and pesto spiced quinoa.
The time I eat it: 12:30 P.M.
How I make it or where I get it: I buy a delicious homemade pesto from my local green grocer and it’s absolutely delicious. I find pesto a really easy way to add loads of flavour to what would be a simple dish and I use it a lot in my cooking.

Snack

What I eat: Chocolate-coated rice cakes.
The time I eat it: 3 P.M.
How I make it or where I get it: My boyfriend got me obsessed with the Itsu chocolate-coated rice cakes and now I always opt for them to combat the common afternoon slump. They’re the perfect mix of sweet and savoury!

Dinner

What I eat: Warm lentil, tomato, avocado and mint salad.
The time I eat it: 6:30 P.M.
How I make it or where I get it: I really like the Merchant Gourmet microwave packs of quinoa and lentils. They are so handy to have as a cupboard staple and I use them to fill out lots of my meals. Lentils are a great source of plant-based protein, and I aim to have at least one plant-based meal most days, so I find I use them a lot during the week.

Snack

What I ate: Alpro plain yogurt with frozen blueberries and raspberries.
The time I ate it: 7:30 P.M.
How I made it or where I got it: I freeze my berries to keep them fresh, and then enjoy them in this yogurt most evenings. Although nothing will ever replace my love for ice cream, this is a tasty alternative.

Workout

Workout I did: Ran 5km (I’m training for the Royal Parks half marathon at the moment).

The time I did it: 11 A.M.

Overall thoughts about your day today and how you feel

I’m always a happy bunny if I eat well, get enough sleep and maximise my day with productive work and a good workout, and today was one of those days!

What are other wellness activities or habits that make you feel like your best self?

I enjoy yoga for both mind and body – I have a great studio near me where I often practice. I also try and read at least 10 pages of a book each day, as I find meditating quite challenging, but this always allows my mind to calm down and zone out for a while.
