Frances Phillips is a model that has been featured in top publications such as Elle, GQ, and Harper’s Bazaar. Talk about impressive. Though her modeling career was booming, Frances decided to train as a Nutritional Therapist, after battling with both eczema and acne, in a bid to resolve her skin issues. Nowadays, Frances is a practicing Nutritional Therapist specializing in skin and beauty, a health writer, and a big supporter of the inside-out beauty method. Below, this clean-eating expert gets real about what she eats in a day.

Breakfast

What I eat: Smoothie! The one I had this morning was chocolate pea protein with frozen cherries, frozen banana, avocado, almond milk, tocos, cacao and cinnamon, but I always switch them up.
The time I eat it: 9:30 A.M. After I got back from the gym. If I work out early, I prefer not to eat before.
How I make it or where I get it: Everything in my nutribullet!

Snack

What I eat: I don’t snack in the mornings but I usually have a coffee. I either have a black coffee, cold brew, almond latte or oat latte. Today I got an oat milk latte.
The time I eat it: 11 A.M.
How I make it or where I get it: The coffee shop near my apartment.

Lunch

What I eat: Leftover chickpea curry from last night’s dinner.
The time I eat it: 1 P.M.
How I make it or where I get it: I made this last night using onion, garlic, spinach, chickpeas, turmeric, coconut milk, mustard seeds, lime and cilantro.

Snack

What I eat: Sometimes I snack around this time and sometimes I don’t, usually depending on how late I’ll be eating dinner. I knew I was going out tonight so I had an apple with almond butter and green tea.
The time I eat it: 4:30 P.M.
How I make it or where I get it: At home.

Dinner

What I eat: Sourdough bread with butter followed by Cornish cod with jersey royals, wild samphire, peas & cod bisque with a glass (or two) of white wine. I also ordered some extra greens. Then I had a salted chocolate pot for dessert. I’m all for balance in life!
The time I eat it: 8 P.M.
How I make it or where I get it: My favourite local “farm-to-table” restaurant. I like to know the food I’m eating has some integrity so I am careful with my dining out choices.

SNACK

What I ate: Mint tea.
The time I ate it: 10 P.M.
How I made it or where I got it: At home before I went to bed.

Workout

Workout I did: Pilates class at The Workshop Gymnasium.

The time I did it: 7.30 A.M. I only ever really exercise in the mornings…after midday, it’s just not going to happen. I’m definitely more of a morning person.

Overall thoughts about your day today and how you feel

One of my favourite things to do is go out for dinner! People are often surprised that I drink alcohol or make not so “nutritionist” food choices. My approach to nutrition is informed but fairly relaxed. I eat really well about 90% of the time so I can enjoy the foods I like that aren’t so nutritious. My main concern is usually about the quality of ingredients.

What are other wellness activities or habits that make you feel like your best self?

I take my supplements in the A.M. after breakfast and also drink a lot of water throughout the day. I like to take an epsom salt bath a couple of times a week in the evening. It’s so relaxing and helps me switch off. Also, I’m really trying to implement no phone/laptop before bed. I feel so much better not constantly scrolling. I’m also religious with my skincare. It’s something I’ve always loved and view more as self-care rather than a chore.

Anything else you’d like to add

I’m a big advocate for eating organically. As much as I can I buy organic or choose restaurants which use organic ingredients.
