3 Quick & Healthy Breakfast Recipes To Make The Night Before

We can’t deny that there are some mornings where the snooze button is hit more times than we’re proud of. When this happens, we’re always scrambling to make it to work on time, leaving us with virtually no time to make a hearty breakfast. Since we’re all about helping on-the-go women take control of their mornings, we’ve rounded up a few of our favorite recipes that you can prepare the night before, so you can sleep in without having to sacrifice the most important meal of the day.
No Bake Power Bites (Vegan)
What you need:
1 cup dry old fashioned organic oatmeal
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp vanilla
Mix all of the ingredients in a large bowl, then roll into bite-sized balls. Refrigerate the power bites to set. Not only can these be a quick breakfast, but they’re also a super filling snack to throw in your bag for later.
Spinach Feta Egg White Cups (Vegetarian)
What you need:
16 ounce carton of egg whites
6 tablespoons of feta cheese
3/4 cup chopped spinach
Preheat oven to 325 degrees. Spray the muffin cups with cooking spray (we use coconut oil spray). Place your desired amount of feta (or the cheese of your choice) in the bottom of the muffin cups, then top them with spinach or any other toppings that sound tasty. Shake the carton of egg whites (regular eggs with yolk may also be used) and fill each of your cups. While you’re pouring the eggs in, leave 1/4 cup of room at the top. Add in salt and pepper to taste. Then, place in the oven for 15-20 minutes, until eggs puff up, but are still jiggly in the center.
Remove muffin cups from the oven, and let them cool off for 5 minutes. You can place these in a container in the refrigerator for up to 5 days (that means breakfast for the whole week!). Want to switch things up? You can add in roasted red peppers, ham, turkey, grape tomatoes, etc.! They can also be served on an english muffin or eaten alone.
Baked oatmeal (Gluten-free)
What you need:
4 eggs
1 cup sugar
2 tsp baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
2 tsp vanilla
2 cups milk
6 tablespoons butter
6 cups quick cooking oats
First, preheat the oven to 350 degrees. Next, spray a 9×13 dish with cooking spray and melt the butter in the microwave. Whisk eggs then add the sugar, baking powder, salt, cinnamon, and vanilla. Mix until smooth, add the oats, and stir until combined. Pour ingredients into the baking dish and flatten over the top of the dish. You can either refrigerate it overnight and bake it in the morning or bake it immediately. To bake, place the dish in the oven for 40-45 minutes. Once you take it out, make sure to let it cool off. Wrap that baby up and you’re ready to go!
